Slow Cooked Beef Madras
Description
Tender diced beef slow cooked in an authentic madras curry full of rich spices and flavour, best served with rice or naan bread
Prep time:15 minutes
Cooking time: 4 hours (high); 6 hours (low)
Serves: 4-6 people
Ingredients
1 kg diced beef
season all to taste
1 tbsp fresh ginger, finely chopped
4 cloves of garlic, crushed
3-4 green chillies, chopped (optional)
1 medium onion, diced
3 tbsp cooking oil
1 can chopped tomatoes
400 ml hot water
2.5 tbsp madras paste
salt to taste
handful of fresh coriander

Instructions
1. Add some season all to taste to a 1kg of washed diced beef. Mix well with your hands

2. Add the ginger, garlic and green chillies and mix well with a spoon
​
3. Add the cooking oil to a saucepan on medium heat and then add the onions. Cook until they turn translucent
​
4. Turn up the heat to high and add the diced beef. Cook until the beef is brown on all sides
​
5. Add the chopped tomatoes, water and madras paste. Stir well and bring to a boil.

6. Pour the curry carefully into a slow cooker dish. Connect to the slow cooker basin. Turn on high heat and cook for 4 hours ( or 6 hours on low heat)

7. One hour before ready, stir the curry and add salt if necessary
8. Garnish with fresh coriander before serving
