Grilled Jerk Chicken

Quarter chicken marinaded in an authentic Jamaican jerk chicken marinade and then oven grilled

8 quarter chickens
3 tsp lemon juice
1 onion
4 garlic cloves
2 limes- squeezed
1/4 cup dark soy sauce
1/4 cup apple cider vinegar
1/4 cup olive oil
2 scotch bonnets
1 tbsp ground black pepper
1 tsp ground all spice
1/2 tsp ground cinnamon
1 tbsp ground ginger
1 tsp ground nutmeg
1 tsp light brown sugar
2 tbsp dried thyme
1 tbsp salt

1. Soak the quarter chickens in water and the lemon juice for 10 minutes then drain the water
​
2. In a good blender (e.g. a Nutribullet blender) add all the remaining ingredients then blend to form a smooth paste
​
3. Pour the jerk marinade over the chicken and rub well with your hands. Cover the chicken with clingfilm and marinade in the fridge for at least 2 hours
​
4. Place the chicken in a dish and add any remaining jerk marinade to the chicken using an applicator brush
​
5. Grill on high heat for 35 to 40 minutes. Routinely turn the chicken over during the time when the skin becomes brown or starts to char.
