Ghanaian Plantain
Pancakes (Tatale)
Delicious plantain pancakes made from a tasty blend of plantain, ginger, flour and pepper, then baked to form a perfect golden brown pancake
Sutiable for vegetarians
Serves: 6-10
Prep time: 30 minutes
Cooking time: 30 minutes
2 over ripe plantains (black and soft)
2 cm piece fresh ginger
1 scotch bonnet ( optional)
1 small onion, chopped
1 tsp pure palm oil
salt ot taste (~ 1tsp)
100g self raising flour, sieved

Instructions
1. Peel and chop the plantain, then add to a blender with the ginger, scotch bonnet and onion. Blend until smooth

2. Pour the batter into a bowl, then add the palm oil and salt to taste. Mix in well then add the flour, fold in then leave to stand for 20 minutes
3. Pour the batter into two lightly greased round sandwich tins (~7-8 inch diameter tins). Bake for 30 minutes at 180 degrees Celsius or until golden brown.

4. Leave to cool for 5 minutes then, remove from tin before serving.
